I came across this recipe on the Vegetarian Times website and the ingredient combo intrigued me so much that I felt the need to try it right away. This mix makes a tasty smoothie that satisfying and filling, but also oddly refreshing thanks to the inclusion of the cucumber.
INGREDIENTS
2 large garden cucumbers, peeled, seeded, and cut into chunks (2 cups)
1 cup low-fat vanilla yogurt
1 cup frozen blueberries
1–2 tablespoons honey or agave nectar
1 tablespoon lemon juice
INSTRUCTIONS
Step One: Place all ingredients in blender, and blend until smooth.
